Position Summary
The Treinta-Treinta Manager is responsible for the day-to-day management, performance, and growth of Treinta-Treinta at La Esquina SoHo.
The Manager is accountable for delivering a consistently strong guest experience while maintaining Company standards for service, hospitality, safety, compliance, labor, and financial controls.
A key responsibility of this position is to increase both lunch and evening business at Treinta-Treinta, working closely with the General Manager to grow covers, maximize reservations and walk-in traffic, develop repeat clientele, and improve the overall financial performance of the space.
The Treinta-Treinta Manager provides hands-on leadership of the FOH team and maintains ownership of service execution, reservations and capacity management, staffing, training, scheduling, labor management, payroll administration, daily financial controls, and the overall guest experience.

Operational Leadership & Floor Management
- Take ownership of the day-to-day operation of Treinta-Treinta.
- Maintain a strong and consistent management presence during lunch and evening service.
- Manage service flow, guest experience, atmosphere, cleanliness, and operational readiness.
- Act as Manager on Duty for Treinta-Treinta and exercise appropriate operational authority.
- Uphold and enforce Company standards relating to service, hospitality, health, labor, safety, sanitation, and responsible alcohol service.
- Monitor food and beverage service to ensure Company standards are consistently maintained.
- Actively participate in guest recovery and resolve guest concerns.
- Be an active member of the floor team and step into operational roles when required.
- Ensure opening, closing, side work, cash handling, comps, check-outs and End of Night procedures are completed accurately.
- Take an active role in growing Treinta-Treinta's lunch and evening business.
- Work with the General Manager to establish and execute strategies to increase covers, sales, average check and repeat business.
- Monitor daily and weekly sales performance against budget and prior-year performance.
- Identify underperforming dayparts and recommend operational or sales strategies to improve performance.
- Drive lunch traffic through strong service execution, reservation management, guest development and local relationship building.
- Build relationships with regular guests, VIPs, neighborhood businesses, hotel/concierge contacts and key clientele.
- Maximize Treinta-Treinta's available seating and capacity through effective reservation pacing and walk-in management.
- Ensure the FOH team is trained in suggestive selling and understands daily sales priorities.
- Provide the General Manager with regular feedback regarding sales trends, guest behavior and opportunities to grow the business.
- Manage Treinta-Treinta reservation pre-planning and the Resy Notify List.
- Work with the General Manager on reservation strategy, pacing, capacity, guest flow and opportunities to maximize covers.
- Ensure reservations and guest notes are maintained accurately in Resy.
- Manage VIP reservations and maintain relationships with regular guests and key clientele.
- Ensure the host stand is appropriately staffed and phones are answered during operating hours.
- Actively manage the atmosphere of Treinta-Treinta, including lighting, music volume, cleanliness and overall energy.
- Ensure guest feedback and complaints are addressed promptly and escalated to the General Manager when appropriate.
- Manage, coach and develop the Treinta-Treinta FOH team.
- Support the General Manager with recruitment, interviewing, hiring and employee selection.
- Ensure new employees are properly onboarded and trained.
- Conduct pre-shift meetings and ongoing service and product education.
- Provide active coaching and feedback throughout service.
- Participate in employee evaluations, disciplinary matters, write-ups and terminations in coordination with the General Manager, HR and Director of Operations.
- Prepare Treinta-Treinta FOH schedules based on projected sales, reservations and business needs.
- Submit schedules to the General Manager for final approval and budget review.
- Maintain approved schedules two weeks in advance.
- Monitor daily business levels and make appropriate cuts, call-ins and staffing adjustments.
- Monitor Treinta-Treinta FOH labor performance and maintain labor within established targets while protecting service standards.
- Review employee clock-ins, clock-outs, missed punches and timekeeping discrepancies daily.
- Reconcile employee tips and hours as required.
- Complete daily money reconciliation and ensure cash and financial reporting are accurate.
- Ensure invoices are collected and entered into the appropriate inventory system.
- Prepare and conduct Treinta-Treinta pre-shifts.
- Complete required End of Night reporting.
- Support the General Manager with weekly payroll preparation and timeclock reconciliation.
- Maintain required operational and employee documentation.
- Support the General Manager in achieving Treinta-Treinta's sales, labor, beverage cost and profitability targets.
- Monitor sales, covers, average check, labor, discounts, comps, refunds and other key operating metrics.
- Review performance by daypart, with particular attention to lunch and evening sales growth.
- Exercise Manager on Duty authority for approved comps, voids, discounts and refunds.
- Enforce beverage portioning, recipe, par and inventory procedures.
- Monitor waste, breakage and potential theft.
- Escalate financial, inventory, beverage cost and operational variances to the General Manager.
- Be accountable for understanding Treinta-Treinta's weekly financial performance and taking appropriate operational action when targets are not being achieved.
- Enforce Company standards and applicable federal, New York State and New York City requirements relating to health, safety, sanitation, labor and alcohol service.
- Maintain a safe, secure, clean and professional environment.
- Ensure security procedures protect employees, guests, cash, inventory and Company assets.
- Complete accident and incident reports as required.
- Uphold Department of Health and ServSafe requirements.
- Maintain a valid NYC Food Protection Certificate.
- Minimum 3–5 years of restaurant management experience, preferably in a high-volume hospitality or nightlife environment.
- Strong leadership, communication, organizational and problem-solving skills.
- Demonstrated experience managing FOH operations, teams, scheduling, payroll and labor.
- Demonstrated ability to drive restaurant sales and build guest traffic.
- Strong understanding of reservations, guest recovery, VIP management and service pacing.
- Working knowledge of New York State and New York City restaurant and labor requirements.
- Proficiency with POS, scheduling, reservations and payroll systems; Toast, Sling, Paylocity and Resy preferred.
- NYC Food Protection Certificate required.
- ServSafe certification preferred.
