Wine Director

AirMax Hospitality is seeking a Wine Director to own the vision, quality, and performance of our wine program across a growing portfolio of NYC venues, including Roscioli, Tokyo Record Bar, Pearl Box, and a fourth project coming online in early 2027.

What you'll do:

• Design and maintain wine lists tailored to each venue's distinct concept, cuisine, and guest experience
• Manage distributor, importer, and producer relationships, including negotiating pricing, allocations, and terms
• Own beverage cost, pour cost, and margin targets across the portfolio
• Set pricing strategy and manage purchasing against sales trends and inventory levels
• Establish cellar, par, and inventory standards, driving accuracy and reducing shrink
• Train and inspire service and management teams through tastings, pairings, and ongoing education
