What you’ll do…
- Help create and regularly refresh a balanced, exciting and commercially sensible wine list for our restaurants, bars and events.
- Make wine recommendations that start with the guest - listening to what they like, explaining options simply and never making anyone feel out of their depth.
- Deliver confident, relaxed wine service, including pairing, decanting and bottle presentation where appropriate.
- Build sales through genuine knowledge, great storytelling and thoughtful suggestions rather than hard selling.
- Manage wine ordering, receiving, storage, stock rotation and inventories, keeping availability and quality under control.
- Track wine performance and revenue, using the numbers to refine the list, pricing and activity plan.
- Train and coach the F&B team on wine knowledge, service, pairings and how to make useful recommendations.
- Create tastings, events and collaborations that bring people into the hotel and make wine feel social and fun.
- Develop good relationships with suppliers and stay connected to new producers, regions and trends.
- Work closely with chefs and F&B leaders so the wine and food offers complement each other.

- You have strong knowledge of key wine regions, grapes, styles and food pairing, and you keep learning because the subject never really stops.
- A recognised wine qualification such as WSET Level 2 or 3, CMS or equivalent is preferred.
- You’re engaging and approachable, able to talk to both wine enthusiasts and complete beginners.
- You combine a love of wine with good commercial instincts around pricing, stock and revenue.
- You’re confident training teams and creating tastings or events.
- You communicate fluently in English; additional languages are a bonus.
