Job Description
Position Summary Manages and directs the operation of the airline catering unit or “flight kitchen” with gross revenues of $350,000 to $2.1M+ and direct and indirect headcount of 8 to 70+ employees. Essential Duties and Responsibilities Leads and manages exempt staff of all Departments in the Airline Catering unit, including Food production, Transportation, Equipment Processing, Storeroom, Dish‑room/Porters, and Quality Assurance. Ensures customer service and compliance with airline account requirements, production processing, on‑time performance, equipment inventory, and quality assurance controls.
Drives achievement of business objectives and goals related to food costs, labor costs, sanitation, quality assurance, market track goals, and airline objectives. Maintains the highest level of HACCP, FDA, Local Airport, Quality Assurance, and Airline Specifications compliance. Monitors menu cycles to ensure uninterrupted customer service and satisfaction.
Manages day‑to‑day operation staff to exceed set targets. Supports Lean and Quality initiatives to achieve OPEX targets. Monitors training programs to enforce corporate policies and procedures.
Manages employee relations and ensures compliance with National Master and Local Addendum labor agreements. Assists in customer audits and government audits to meet compliance. Reaches annual performance evaluations of direct reports in compliance with corporate initiatives.
Maintains communication with local and corporate airline representatives to resolve requests and investigations. Assists Regional Director on projects, investigations, training, corporate goals and airline requests. Completes administrative reports accurately and timely.
Secures the facility, monitoring TSA, local airport, and corporate requirements. Prevents and detects defects and coordinates actions to prevent nonconformities. Maintains key performance metrics for the Operation organization.
Verifies that company policies and procedures are followed and up to standard. Develops and implements Standard Operating Procedures. Ensures safety, quality, and compliance to customer specifications.
Completes required training, including ServSafe Sanitation Manager Certification. Education Associate or Bachelor degree in business administration or related field preferred. Work Experience Successful track record as a Manager or Assistant Manager in airline catering required. 7–10 years of experience in in‑flight catering or food manufacturing environment required.
Experience managing financials with budget responsibility required. Knowledge of Lean manufacturing principles, Six Sigma, or continuous improvement methodologies preferred. Proven experience managing a team of supervisors and managers required.
Previous customer service and/or account management experience required. Solid track record of innovation to improve the unit performance. Labor relations experience required.

Effective operation management while maintaining regulatory compliance (FDA, HACCP, security). Advanced Microsoft Office skills (Excel, Word). Knowledge of quality auditing and inspection methods.
Detail oriented, strong project management, and organizational skills. Change agent mindset. Communication Skills Strong interpersonal skills, communicating effectively with multiple departments and customers.
Excellent written and oral communication skills. Certificates, Licenses and Registrations Acknowledged ability to obtain an AOA badge and customs seal. Travel Up to 25% as required to attend management or leadership team meetings.
Environmental Requirements Regularly stands, bends, lifts, and moves intermittently during shifts of 10+ hours. A rotating schedule of 55+ hours per week is typical. Physical discomfort due to temperature and noise may occur.
