The hospitality group behind acclaimed Llama Inn London, Llama Inn Madrid, and Cafe Bar J.F has expanding its footprint with Papa San, a Peruvian-Japanese izakaya located at 34th Street and 10th Avenue in The Spiral. We are currently seeking an experienced and hospitality-driven Floor Manager to join our leadership team.

The Floor Manager will play an integral role in the day-to-day operation of Papa San, with a strong presence on the dining room floor. Reporting directly to the Assistant General Manager and General Manager, the Floor Manager will help lead the front-of-house team and ensure consistent execution of Papa San’s service and hospitality standards.

The ideal candidate is a confident leader with exceptional hospitality instincts, strong wine knowledge sake a plus, and a genuine passion for developing teams and creating memorable guest experiences. This is a hands-on leadership position for someone who thrives in a fast-paced, high-volume restaurant and leads by example.

Floor Manager Responsibilities
  • Lead day-to-day floor operations, including opening and closing shifts
  • Maintain a strong and visible management presence throughout service
  • Lead the front-of-house team in delivering warm, knowledgeable, and attentive hospitality
  • Actively participate in all steps of service and ensure company service standards are consistently maintained
  • Demonstrate strong knowledge of wine, sake, and beverage service
  • Support beverage education and ongoing wine and sake training for the FOH team
  • Coach, train, and develop team members to strengthen product knowledge, service standards, and overall performance
  • Conduct pre-shift meetings and communicate daily priorities, menu updates, beverage features, and service notes
  • Build relationships with guests and recognize opportunities to create memorable and personalized experiences
  • Respond professionally and effectively to guest feedback and resolve service issues in real time
  • Work closely with the General Manager, Assistant General Manager, Chef, and leadership team to ensure seamless communication between the dining room, bar, and kitchen
  • Maintain restaurant standards in accordance with Department of Health regulations and company policies
  • Help foster a positive, professional, accountable, and hospitality-focused workplace culture
Additional Responsibilities
  • Support the General Manager and Assistant General Manager with service, staff development, and operational projects as assigned
  • Assist with ongoing employee education and training programs
  • Provide continuous coaching and feedback to FOH team members
  • Assist with scheduling and daily staffing needs when necessary
  • Monitor the dining room throughout service to ensure proper pacing, table maintenance, and guest satisfaction
  • Support beverage inventory, organization, and cost-control initiatives as needed
  • Help maintain and elevate Papa San’s standards for hospitality, food, wine, sake, spirits, and overall guest experience
Requirements
  • Minimum of 3–5 years of experience in a full-service restaurant environment, including previous management or floor leadership experience
  • Strong knowledge of wine, sake, and beverage service
  • Strong leadership skills with the ability to coach, motivate, and hold a team accountable
  • Exceptional hospitality skills and a genuine passion for creating memorable guest experiences
  • High-volume restaurant experience, ideally in operations serving 100–200 covers per night
  • Proven ability to lead hourly employees during fast-paced service
  • Strong communication, organization, and problem-solving skills
  • Ability to remain composed, professional, and guest-focused under pressure
  • Experience training and developing front-of-house employees
  • Working knowledge of restaurant cost controls, including labor, COGS, comps, and beverage costs, is preferred
  • Experience with Toast, Resy, and BinWise is preferred
  • Experience with Latin American, Japanese, Peruvian, or chef-driven restaurant concepts is a plus
  • Food Handler Certification required or willingness to obtain certification

We are looking for a leader who understands that great hospitality starts with a strong team. The right candidate will be equally comfortable leading the floor, discussing wine with a guest, coaching a server, supporting the bar team, and stepping into service wherever needed.
