Job Description

Ready to run a bottle shop like it's your own?

The Castle Tavern is seeking an experienced, driven and hands‑on Bottle Shop Manager to lead our busy retail store and drive‑thru bottle shop.

This isn't just another management role. We're looking for someone who wants to take ownership, lead from the front and make a genuine impact on the success of the business. Working closely with the venue's General Manager, you'll have the autonomy to make decisions, drive performance and build a team that delivers exceptional customer service every day.

The Castle Tavern has built a reputation for exceptional customer service, a strong product offering and a team we're incredibly proud of. We're looking for someone who shares our passion for hospitality, retail excellence and delivering an outstanding customer experience.

About the Role

As Bottle Shop Manager, you'll be responsible for the overall performance and day‑to‑day operation of our liquor business. From inventory and merchandising to team leadership and financial performance, you'll oversee every aspect of the operation while ensuring our corporate partner standards, promotional requirements and liquor licensing obligations are consistently met.

This is a hands‑on leadership role that requires energy, initiative and a willingness to lead from the front. You'll spend much of your day on your feet, lifting stock, merchandising displays and working across both bottle shop operations. If you enjoy being actively involved in the business rather than sitting behind a desk, you'll thrive in this role.

  • Lead the day‑to‑day operations of the retail store and drive‑thru.
  • Recruit, lead, coach and develop a high‑performing team.
  • Prepare staff rosters and effectively manage labour costs.
  • Deliver exceptional customer service and maintain outstanding store presentation.
  • Manage stock ordering, inventory control, receiving and stock rotation to ensure optimal product availability.
  • Build and maintain strong relationships with suppliers and industry partners.
  • Execute promotional activity, merchandising standards and corporate compliance requirements.
  • Maximise supplier rebates and commercial opportunities.
  • Take ownership of the commercial performance of the business, including sales, gross profit, wage costs, supplier rebates and key business metrics.
  • Analyse business performance and identify opportunities to improve sales, profitability and operational efficiency.
  • Oversee cash handling including investigating variances, reconciliation of tills and daily operational procedures.
  • Ensure compliance with liquor licensing legislation, RSA requirements, the Venue Management Plan, workplace health and safety, and company policies.

About You

You'll be a confident and approachable leader who enjoys building successful teams and creating an environment where both staff and customers enjoy coming to work and shop.

  • Previous management experience in retail, hospitality or liquor retail.
  • Current RSA certification (RP Badge preferred).
  • Strong leadership and people management skills.
  • Experience with retail POS and inventory management systems.
  • Excellent stock control and organisational skills.
  • A commercial mindset with the ability to interpret financial results and drive business performance.
  • Experience managing supplier promotions, merchandising standards and compliance programs.
  • Outstanding communication, problem‑solving and decision‑making skills.
  • A hands‑on approach with the ability to thrive in a busy retail environment.

What We Offer

  • Competitive salary package.
  • A leadership role with genuine autonomy and responsibility.
  • The opportunity to make a real impact on the growth and success of the business.
  • Supportive ownership that values initiative, ideas and results.
  • Strong supplier and corporate partnerships.
  • Ongoing career development and progression opportunities.

If you're an experienced retail or liquor industry leader with a strong commercial mindset and a passion for leading people, we'd love to hear from you. This is your opportunity to make a genuine impact within a successful independent business.
