Position Summary

Marble Room Steaks & Raw Bar is seeking an experienced, passionate, and driven Chef de Cuisine to lead daily kitchen operations in one of Cleveland's premier fine dining destinations. The Chef de Cuisine will partner with Executive Leadership to maintain exceptional culinary standards, oversee kitchen management, develop team members, and ensure the consistent execution of Marble Room's renowned steakhouse and seafood offerings.

This role requires a hands-on culinary leader with strong operational expertise, a commitment to excellence, and the ability to thrive in a high-volume luxury dining environment.

Key Responsibilities Culinary Leadership

• Lead and manage all back-of-house culinary operations.
• Ensure consistent execution, presentation, and quality of all menu items.
• Maintain Marble Room's standards for flavor, appearance, and guest satisfaction.
• Collaborate on menu development, seasonal features, and special event offerings.
• Uphold food quality standards through recipe adherence and quality control processes.

Team Management & Development

• Recruit, train, coach, and mentor culinary team members.
• Foster a culture of professionalism, accountability, and continuous improvement.
• Conduct performance evaluations and provide ongoing feedback.
• Build schedules that maximize productivity while controlling labor costs.
• Promote teamwork and strong communication between kitchen and front-of-house teams.

Operations & Financial Performance

• Manage food and labor costs to meet budgeted targets.
• Monitor inventory levels and oversee purchasing activities.
• Maintain proper product rotation, storage procedures, and waste reduction initiatives.
• Analyze kitchen performance metrics and implement operational improvements.
• Ensure efficient service execution during high-volume dining periods and private events.

Food Safety & Compliance

• Maintain strict adherence to all health department regulations and food safety standards.
• Ensure compliance with sanitation, cleanliness, and workplace safety procedures.
• Conduct regular inspections to maintain an organized and efficient kitchen environment.
• Ensure all employees follow company policies and operational procedures.

Qualifications Required

• 5+ years of progressive culinary leadership experience.
• 2+ years as a Chef de Cuisine, Executive Sous Chef, or comparable leadership position.
• Experience in upscale dining, luxury hospitality, steakhouse, seafood, or fine dining environments.
• Strong leadership, communication, and organizational skills.
• Proven ability to manage labor, food costs, and inventory controls.
• Comprehensive knowledge of food safety regulations and kitchen operations.
• Ability to lead by example in a fast-paced environment.
• Have the culinary and operational ability to grow into executive chef role as the company expands

Preferred

• Culinary degree or formal culinary training.
• Experience with dry-aged steaks, premium seafood, and raw bar operations.
• Experience managing large culinary teams.
• ServSafe Manager Certification or equivalent.

Physical Requirements

• Ability to stand and walk for extended periods.
• Ability to lift and carry up to 50 pounds.
• Ability to work evenings, weekends, holidays, and varying shifts as business demands require.
