Defined Hospitality, the Philadelphia based hospitality group behind acclaimed restaurants such as Suraya, R&D, Pizzeria Beddia, Condesa & El Techo, and Kalaya, is accepting applicants for a Wine Director / Beverage Manager position at Picnic.
Picnic is a wood-fired rotisserie and oyster restaurant featuring an award-winning natural wine program and bottle shop opened in July 2024. The 11,000 square-foot restaurant and event space inhabits a historic boilerhouse originally built in 1899. Known for its backyard-esque atmosphere, Picnic is a neighborhood restaurant that offers families and friends a place to enjoy standout food, such as rotisserie chicken, ribeye, oysters, branzino, and frozen yogurt, and thoughtful beverages, from low intervention wines to full-proof and zero-proof cocktails. Picnic has been named one of “The 25 Best Restaurants in Philadelphia Right Now” by The New York Times and among “The 15 Best Restaurants in Fishtown” by Infatuation Philly.
The candidate should have a track record of successful wine list development, as well as participation in sales building and P&L management. Additionally, the candidate should be qualified to lead, teach and direct a staff to execute a high level of hospitality.
Excellent communication skills and strong natural wine knowledge are a must.
1-2 years previous experience as a front of house manager is required. Wine education certification is a plus, but not required.
Responsibilities Include:
- Developing a dynamic natural wine list for the dining room and bottle shop. - Developing wine education curriculum to present at daily pre-shift meetings and monthly staff trainings. - Planning and executing monthly wine events to engage our guests with the wine program. - Developing and maintaining recipes for our cocktail program. - Managing inventory of wine, beer and spirits. - Providing outstanding hospitality to our guests. - Excelling in a high volume and high energy environment. - Overseeing performance of staff and coaching individuals to be their best. - Upholding service and sanitary standards
