Desert Hawk and The Low Horse are elevated neighborhood bars bringing high-energy nightlife vibes to Wicker Park. Desert Hawk pairs a craft beverage program with an active food menu, while The Low Horse focuses strictly on drinks. Across both concepts, our bar program centers on fast-building, high-quality cocktails served with speed and precision.

Position Summary

We operate with a lean staffing model, making this ideal for experienced, self-sufficient bartenders who excel in fast-paced environments. You must be fully capable of managing a room on your own, maintaining high production standards, and handling solo closing procedures efficiently.

Schedule & Hours

• Sunday availability is strictly required.

• Onboarding / Initial Schedule: 3–4 shifts per week to provide coverage during a team vacation (temporary schedule adjustments apply).

• Ongoing Schedule: ~3 shifts per week, splitting time between Desert Hawk and The Low Horse.

Key Qualifications

• Proven bartending experience in high-volume, fast-paced nightlife or cocktail-focused settings.

• Self-motivated with the demonstrated ability to work independently and execute solo closing routines safely and thoroughly.

• High speed and efficiency behind the bar without sacrificing drink quality or hospitality.

• Strong product knowledge; experience with or passion for agave spirits is a strong plus.
